Recipe, Pink Berry Valentine Cookies!

Since it is February, the official month of LOVE.  I thought it was quite fitting to bake up some pink cookies with heart sprinkles.  I get so excited to stroll the grocery isles and see pink and red everything!  They even have baby pink heart shaped marshmallows, I so want those!  I know I cant be the only one who is a sucker for cute packaging.
These cookies are perfect for making with kids.  Super simple recipe, makes for a good time in the kitchen.  I cant get much done in there if I don't involve my babes.  Gia loved licking the beaters, does that surprise you?   They're a berry flavored cookie, but if you wanted to add in some mini chocolate chips or cherry chips that would be yummy too.
This is a spin on my momma's Gooey Chocolate Cookies, made with a cake mix. Who doesn't love easy to make sweet treats?  It was my first go at it with Strawberry & Raspberry but I'm pleased with the way they came out.  At first these cookies were thought up for my girls to celebrate Valentines Day and incorporating seasonal touches.  Come to find out, I really enjoyed them too. (Still trying to be good over here)

Pink Berry Cookies

1 box Strawberry Cake mix
1 package softened Cream Cheese
1 and 1/2 Teaspoon Raspberry Extract
1 stick softened Butter
1 egg

Mix your cookie ingredients together and put inside fridge to firm up for about 1 hour or more.  To make rolling less of a gooey mess.

For rolling your cookies

3/4 cup Powdered Sugar
1 container of Heart Sprinkles

Pre heat your oven to 350 degrees.  Put powdered sugar in small bowl and the sprinkles into a small bowl for dredging. Take out dough and roll into balls about the size of a golf ball in your hands.  Then plop them down in powdered sugar.  Then put one side of the cookie dough into the heart sprinkles.  Making sure to gently press them in a bit.  Place on cookie sheet, I used my Silpat.  If you don't have one, grease your cookie sheet. Bake for 13-14 minutes. Take out to cool completely on rack.
