Cheesy Chicken and Broccoli Casserole & Giveaway Winner!!!


Do you and your family like comfort food?  The stick to your ribs kind?  If so than this dish is perfect for you!  I love this casserole and so does my husband. He even muttered something like this is my favorite meal that evening. Totally perfect for cold nights and filling up that tum tum.  The ingredients are very basic and you might already have most of them in your fridge and pantry.
You could also make your own cream of chicken soup but I tend to just throw in the canned kind.  Everything in moderation is my lingo!   

This is how I make this casserole.  Pre heat oven to 350.  You can easily use rotisserie chicken or cook the breasts inside your crock pot.  I just happened to cook mine on the stove.  If you have Cream of Mushroom soup you can substitute that as well.  You can also switch up your rice, use brown rice or even try with Quinona.  I always make Jasmine.

1 Tablespoon butter
1 small diced yellow onion
3 large skinless chicken breast, sliced
2.5 cups cooked Jasmine rice
2.5 cups frozen broccoli florets
1 can condensed Cream of Chicken soup
1 can condensed Cream of Celery soup
8 oz. bag of shredded Cheddar Cheese, I left about an oz. or so out.

I cooked my rice in a rice cooker first.  Then I heated up a large pot and added butter.  Add your sliced chicken and season with black pepper and a little salt. Go ahead and toss the onion in. Cook about 3/4 of the way done, then add your frozen broccoli.  They will all cook nicely together.  After a few minutes add your soups and stir.  Bubbling away for a few more minutes.  Lastly mix in your cheddar cheese and cover with lid.  I did let mine sit for about 10 minutes until the rice was finished.  I sprayed a 9x13 dish with non stick spray and evenly spread out my rice.  Then scooped on the cheesy chicken and broccoli mixture.  Making sure no rice was uncovered and poking through. Bake for 30 minutes, by then it should just be browning a bit on top.  Let sit for a few minutes and dish up.
